Favorite Chocolate Recipes
One of my treasured childhood memories is of the many weekends I stayed with my grandmother. I always requested the same breakfast every time she asked and I can still taste it! Homemade cinnamon french toast with homemade maple syrup and hot chocolate made from scratch. That pretty much covers my chocolate, maple and cinnamon obsessions. My birthday cake was and is still the same; Grandma's Chocolate Cake with Can milk Icing. Now I've got some baking to do while you enjoy the page.
Hot Chocolate -
1/2 cup sugar 1/3 cup hot water 1/4 cup cocoa 4 cups milk Dash salt 3/4 tsp. vanilla extract
Mix sugar, cocoa and salt in saucepan; stir in water. Cook and stir over medium heat until mixture boils; boil and stir 2 minutes. Stir in milk and heat. DO NOT BOIL. Remove from heat; add vanilla. Four servings. Refridgerate leftovers to reheat and enjoy later.
West Virginia Chocolate Cake
2 cups sugar 1 tsp baking soda 2 eggs 1 tsp baking powder 1 tsp butter 1 tsp salt 3/4 cup cocoa 1 cup milk 1 cup boiling water 1 tsp vanilla 2 cups flour
Combin sugar, eggs and butter; beat well until creamy. Add cocoa to cup of boiling water; mix well. Add cocoa and water to sugar mixture. Sift flour, baking soda, baking powder and salt. Add alternately with milk and vanilla, starting with and ending with the flour mixture. Beat about 3 minutes. Pour into well greased cake pan. Bake at 350° for 25 to 30 minutes.
Can Milk Icing
2 cups white sugar 1 cup condensed (can) milk 1/2 stick of margarine 1 tsp vanilla
Add sugar, milk and margarine to saucepan. Bring to a boil and cook to soft ball stage. Remove from heat; beat to consistency to spread. Add vanilla. Frost cooled cake.
